Kiwi and Cucumber Smoothie

Kiwi is a berry fruit and very rich in dietary fiber, Vitamin C and K . This is a plain looking fruit which looks pretty when cut open into slices ! I love the beautiful green color with little dotted black spots which make kiwi look interesting and eager  to make an impression. So we give it a chance and blend it with cool cucumber and fresh mint thrown in for flavor, to form a juicy and tasty smoothie. It will lend some  of its beauty to us as this mixture is said to be very cooling and good for skin..so try it on at home or make it as a healthy drink for a party !

Kiwi Cucumber Smoothie

Ingredients

  • Kiwi--3 (ripe)
  • Cucumber- 1 (medium sized)
  • Fresh Mint leaves--3-4
  • A pinch of salt
  • Sugar--1 tablespoon (optional)
  • Water --1/2 a cup

Recipe

Blend all the ingredients together and serve chilled or at room temperature.

Note--You can add apples to this smoothie too!

Sol kadhi

Solkadhi is a drink for Konkan region of Maharashtra. This drink is refreshing and cooling for the system. I tasted it first my kaku's house in US. She is from Goa and is an amazing cook. I loved the drink so much that she makes it for me whenever we visit their place. I believe that food tastes better when it is prepared by a loved one..

Ingredients

Solkadhi Preparation

  • Grated coconut--2 cups (fresh or frozen)
  • Kokum--4-5 pieces (in water for 10-15 minutes)
  • Green chillies--2-3 crushed
  • Garlic--1 (crushed)
  • Jeera powder--1/4 teaspoon

Recipe

Take the grated coconut and blend it in a mixer with 1 cup of water.Take it in a sieve and squeeze out coconut milk from it. Repeat the process with 1 cup of water and blend it.

In the coconut milk add green chillies, jeera powder and garlic.Squeeze the kokums and add kokum water to the mixture.Keep checking the taste for sourness and mix it well. Season with salt. Serve it chilled and enjoy!

Note- Dont add too much water when squeezing out coconut milk as it tends to taste bland.The coconut milk should be thick and creamy.

Mango Lassi

Mango Lassi is perhaps the most popular drink ordered in Indian restaurants by people of all nationalities. It is made with the king of tropical fruits and is rich in taste and flavor.Serve it as a cooler or as a light drink after a spice meal.This drink can me made from either fresh mangoes or pulp available in Indian grocery stores.

Mango Lassi

Ingredients

  • Mango pulp or fresh mango juice--1 cup
  • Yogurt--1/2 cup
  • Milk--1/2 cup
  • Sugar--1 Tablespoon
  • Sour cream--1 Tablespoon (optional)
  • Cardamon Powder--1/2 Tablespoon
  • Almonds--1 Tablespoon (soaked and blanched)

Recipe

Combine the Mango pulp, Yogurt,Milk ,Cardamon, powder Sour Cream and sugar and blend them in a mixer. Pour in a glass and put blanched almonds at the top. Serve Chilled.

Green Mango Drink (Panha)

When I think of Green Mango I think of my Aunt's house in Pune where she had huge trees abundant with green mangoes. She used to hire people just to take out all the mangoes and store them in baskets. After making pickles and other stuff she made "panha pulp" which is stored in airtight containers and lasts for a year if refrigerated.

This juice is served in all the marathi households and is said to be cooling to he body in sweltering heat of summer. Guests always prefer this homemade juice over the store brought versions and kids love them too. There are two types of recipes one is sweet and other is salty. Sweet  panha is the oldest version of it since I can remember. You can quickly serve it to your guests once you make the pulp.Here is how you make it..

Green Mango Drink (Panha)

Sweet panha

  • Green mangoes--2 (remove the skin and cut it in long pieces)
  • Sugar --2 cups
  • Cardamon (Elaichi) powder--1 Teaspoon

Recipe

Take green mangoes and add very little water to it.Cook it in a pressure cooker until soft.Take a sieve and filter it with a big spoon until you get a soft pulp at the bottom.Now add the sugar and elaichi powder to it and store it in a airtight jar.

To make Panha take a glass and add a spoonful of mango pulp to it.Add half teaspoon of sugar , a pinch of salt and pour chilled water and mix.

Salty Panha

  • Green Mangoes--2 
  • Salt --1 Tablespoon
  • Mint (Pudina) leaves-1 Teaspoon
  • Black Salt--A pinch
  • Cumin (Jeera) Powder--1 Teaspoon

Recipe

Take a the green mangoes and cook them in pressure cooker until soft. Sieve them and take the filtered soft pulp,now add the salt and cumin powder to it and store it in a airtight jar.

When serving the juice take a tablespoon of the pulp in a glass and  pour chilled water. Add mint leaves and serve.
