Curry Puff

Curry puff's are so popular in Hyderabad that they are available in the tiniest grocery stores. They are mostly consumed in college canteens or Irani cafe's along with piping hot tea. I was overjoyed when my friend made this in US and took it out from a hot oven. It tasted so much better than the canteen and was freshly baked ! Make them as a perfect starter for any party they wont trouble you much as they are easy and quick!

Curry Puff

Ingredients

  • Frozen Puff pastry sheets--1 ( Take it out and keep at room temperature for 30 minutes)
  • Fliiling
  • Potato-- 1 ( Bolied and crushed)
  • Carrot--1 (chopped finely)

Curry Puff Preparation

  • Onion--1 (chopped finely)
  • Green chillies--3-4
  • Peas--1/4 cup
  • Ginger garlic paste--1/4 teaspoon
  • Chat Masala --1/4 teaspoon

Recipe

For  Filling-- Take oil in a pan and add some mustard seed ..when they crackle throw in the green chilled, add the ginger garlic paste. Add onions and roast them. Now add the carrots and Peas and saute well. Add chat Masala and season with salt.

Curry Puff

Take the pastry sheets and fill them with the filling .Bake in a preheated oven at 350 degrees for about 20-25 minutes. Take them out when they are light brown and serve hot with ketchup or chutney.

Note-- You can also put boiled Eggs for making egg puff.

Grilled Chutney Sandwich

This Sandwich recipe is a perfect breakfast for a busy day ahead. There must be  hundreds of sandwich recipes around the world. The bread slices accommodate so many ingredients from meat ,vegetables,jams and jellies and make a perfect sandwich. It is a quick and healthy bite for  busy day. In this recipe sandwich goes completely desi with green coriander mint chutney and tastes delicious too!

Chutney Sandwich

Ingredients

  • White Bread slices--4 cut the corners
  • Jeera powder
  • Butter

Take a  bread slice  and grate some butter on it so that it spreads evenly. Sprinkle a pinch of salt and jeera powder. On the other slice apply coriander-mint chutney evenly.Now put the bread together and grill it in sandwich maker . Serve it with coriander chutney when ready.

Note- You can add vegetables of your choice like cucumbers,onions,tomatoes thinly sliced to the bread and make a vegetable grilled sandwich.

Coriander-Mint chutney

  • Coriander--1 cup chopped
  • Mint leaves -1\2 cup chopped
  • Grated fresh coconut (or frozen) --1\2 cup
  • Juice of one Small Lime
  • Green chillies--5-6 chopped
  • Salt--1\2 teaspoon

Put all the ingredients into a mixer and grind them to a paste. Season it with salt and store the chutney in the fridge.

Pasta-Desi version

Pasta as you all know is a Italian Dish widely available everywhere.I was amazed to know how many types of pasta are available in one aisle here in the supermarkets.The ingredients range from whole purpose flour to a more healthier whole wheat option.Pasta is  a Big-Hit among children mainly due to their" good looks" and texture.Our poor curd rice does not share this luck with kids :) 

This recipe is made with brown rice pasta which is available in trader joe's .You can get any other pasta in any supermarket according to your taste.Since I want to make it healthy for kids,I did not add any cheese ,you can always add it.

Ingredients

  • Brown rice penne pasta
  • Onion-1
  • Tomato-2-3 grape tomatoes or 1 medium size
  • Garlic -1\2 tsp crushed
  • Basil --fresh leaves or dry basil
  • almonds or cashews --crushed 1 tsp

Recipe

Take a pan and add water to it.When water starts boiling add the pasta and a pinch of salt to it.Stir the pasta so that it does not stick to the pan.Cook the pasta for 8-10 minutes ( check the packet for time recommendations) take it out and drain it in a sieve and add cold water over it so it does not stick together.

Take olive oil in a pan,lower the flame and heat the oil.Add garlic crushed and saute.Add a pinch of turmeric,basil leaves,pepper powder and onions.Add tomatoes and sauté them for a while but not much..add pasta,salt and almonds.You can add cashews too ,this gives the pasta a  crunchy taste.Take out and serve in a bowl and enjoy when it is hot!

Note: You can add grated cheese and 3-4 tsp of milk to it and boil for 2-3 minutes until soft.
