Dahi-Wada (White lentil fritters with yogurt)

Dahi Wada is a one of the most popular chat items on the menu in any restaurant. It is made with urad dal , dipped in yogurt and sprinkled with spices and chutneys to form a tempting dish appealing to the tastebuds. It is made differently everywhere in India and I am always surprised to see different versions of it. 

I was craving for some dahi-wada and decided to make it today. Usually I make lots of wada's and refrigerate them for  about a week so that I can serve it with dahi and chutney added on the top.I have not come across anyone who does not like it!  It is easy to make once the deep frying is done, and ready to eat in minutes!

Ingredients

  • Urad dal (white lentil)--2 cups 
  • Oil for frying
  • Yogurt or dahi--1 cup
  • Date chutney--4 tablespoons
  • Jeera Powder--1/2 teaspoon
  • Chilli powder--1/2 teaspoon
  • Black salt--a pinch
  • Ginger juice--1 teaspoon
  • Coriander leaves
  • Chat masala--1/2 teaspoon

Recipe

Wada--Soak the urad dal in water for  about 3 hours until soft. Grind it in the mixer by adding very little water. Keep aside for 1 hour. Take a pan and heat oil in it on medium flame till it gets hot. Pour the urad dal batter in it to form wada and fry it till golden brown. Let it cool and soak it in water for abour 6-7 minutes till the wada gets soft. Squeeze out the water completely and  gently in your palms and put it in a bowl.

Dahi (yogurt)----Take the yogurt in a bowl and add jeera  powder,black salt,crushed ginger juice  chat masala to it . Add sugar and salt to taste and mix well

Dahi-Wada--Take the wada in a bowl and cover it with Dahi. Pour some dates chuney on it. Sprinkle coriander leaves, chilli powder, chat masala and serve cool.

Note--When grinding the batter for wada add very little water,the consistency of the batter should be thick not flowy.

Mirchi Bhajji (Fried stuffed Chilli)

Mirchi Bhajji is a spicy snack which is very popular in Hyderabad. The long spicy  mirchi is stuffed with masala and deep fried in oil to form a treat to the tastebuds. It has been a favourite in my family from the time I remember. On my visits to India I dont find the mirchi bhajji to be of same quality as the stuffing is absent from most of the stalls. So we make it at home now with the same recipe and stuffing of our choice. Try this recipe and you sure wont be dissapointed.

Mirchi Bhajji

Ingredients

  • Mirchi (Green chillies) --7-8 (long)
  • Besan (Gramflour)--1 cup (Available in any Indian grocery store.)
  • Turmeric--1/4 teaspoon
  • Ajwain--1/2 teaspoon

For Stuffing

Stuffing

  • Sesame seed powder--(roast sesame seeds and grind into powder)--3 Tablespoons
  • Peanut powder--(roast and grind into powder)---2 Tablespoons
  • Tamarind paste--1 tablespoon
  • Chat masala--1/2 teaspoon (easily available in Indian grocery stores.)
  • Coriander seeds--1/2 teaspoons
  • Black Salt--1/4 teaspoon
  • Water --1 teaspoon
  • Salt to taste

Take the mirchi's and slit them lengthwise. Take out all the seeds with the spoon. Boil around 3 cups of water and add the mirchi's to it.Cook for 5 minutes and drain.

To make besan (Gramflour) paste --Take the besan and add ajwain to it. Add water to make a smooth paste.Add turmeric and salt and keep aside for  half hour . Add red chilli powder if you want to make it little more spicy. 

For Stuffing--Combine all the ingredients in a bowl and add around 1 teaspoon water and mix well.Take the mirchi and put the stuffing inside.

Filled with stuffing.

Heat oil in a pan or kadhai on medium heat and put the stuffed mirchi in the besan paste and dip it in oil. Deep fry till golden brown. Drain on tissue paper and serve hot with chat masala sprinkled over.

Dahi Batata Sev Puri

This is one of my favorite chat dishes. Crunchy puri's are filled with  cool yogurt and the chutneys compliment the dish and add a zesty flavor.  Every  state in India has its own style of making the dahi puri.  The best chat I had till date is in Delhi in the  famous chandni chowk area. I tried to recollect that taste and recreate whatever I can of this lip smacking dish. 

Dahi Batata Sev Puri

Ingredients

  • Puri's--10 ( available at  Indian grocery store)
  • Onion--1 (finely chopped)
  • Moong sprouts (soak a handful of moong dal in water overnight and then tie it in cloth till it sprouts)
  • Potato--1 (boiled and cut into small pieces)
  • Sev--(thin sev)--1\2 cup
  • Chilli powder
  • Chat masala
  • Yogurt or Dahi--1 cup
  • Date --tamarind chutney-- You can buy it readymade or make it at home

Coriander Mint chutney

To prepare yogurt----Take yogurt in a bowl and add salt (1/2 teaspoon) , A pinch of sugar, Jeera powder 1/4 teaspoon, Black salt (a pinch) ,chilli powder 1/4 teaspoon, and some chat masala., mix well and keep aside.

Date Chutney

Boil water and put Dates,tamarind, and jaggery in equal amounts and boil for 20-30 minutes. Add Bay leaf, Ginger powder, and  mix it with a hand mixer. Strain it is a sieve and boil again for 5 -10 minutes.

Recipe

Take plate and put all the puri's on it. Break the puri at center with gentle hands. Add onions, Date-tamarind chutney,boiled potatoes, Moong sprouts,yogurt, Mint coriander chutney and top it with barik sev. Sprinkle coriander leaves, jeera powder, chilli powder and pop it in your mouth immediately! enjoy!

Note: You can skip potatoes or moong dal sprouts if not available.Coriander mint chutney recipe is in chutney section.

Corn chaat

We have corn fields near our house and it is joy to watch them grow so tall with delicate golden hair. We buy corn from these fields almost every year and try out new recipes with them. This year my favorite has been "corn chaat" . This chat is healthy and you can make it in a jiffy. You can serve this with corn chips or chips and they make a great starter. 

Corn Chat

Ingredients

Corn --2 take out the corn kernels and steam them till soft

  • Tomato-1 chopped finely
  • Onion--1 chopped finely
  • Green chillies--2-3 cut into pieces
  • Coriander leaves--washed and chopped
  • Pepper powder -- a pinch
  • Chat Masala (you can get it in Indian grocery store)  or sea salt --1/4 teaspoon
  • Lime juice--1/4 teaspoon
  • Salt to taste

Recipe

Combine the corn kernels with all the above ingredients and mix well. Season with salt and serve

Masala Papad

Masala Papad

Papad offers endless opportunities to cooks. It is served in Indian restaurants with green chutney or it can be made into curry with spices and yogurt. Papads are made with urad dal with spices thrown in for the flavor.

Masala papad is a quick appetizer served in some restaurants in India. Over the time its recipe is changing and all kinds of topping are added to it. I like them best with fresh tomatoes and onions  which make it healthy and tasty at the same time.

Ingredients

Masala Papad

  • Papad --2
  • Onions-1/2 chopped finely
  • Tomatoes--1-2 (chopped finely)
  • Chilli Powder--1/4 teaspoon
  • Cilantro leaves--washed and cut finely
  • Lime Juice--1 teaspoon
  • Thin sev--1 Tablespoon

Recipe

Roast the papad in microwave for about 40 seconds. Place it on a serving platter and distribute onions,tomatoes and cilantro on the top. Drizzle with chat masala, chilli powder, lime juice, sev and season with season with salt. 

Note-The papad can either be roasted in microwave or fried in oil.
