Aloo-Baingan subzi/Potato and eggplant curry

My mom always said that brinjal/eggplant is considered as  be-gun vegetable"Be-gun" means without any "gun" or quality ..but i always loved this vegetable with its brilliant purple color and soft fleshy interior .When the internet flooded indian homes ,I googled to see if  it is really guilty of being useless but contains vitamin-K ,Vitamin-C ,Thiamin,Niacin don't think twice before eating it!


This recipe is called Aloo -baingan ..where both vegetables display camaraderie of jai--veeru:) and when blended with spices they contribute to a very simple and fulfilling meal.Here is the recipe..


  • Potatoes--3-4 medium sized (peeled ,cut and microwave for 3 minutes)
  • Eggplant/brinjal--6
  • Onion--1
  • Tomatoes -2 if small 
  • Cumin powder
  • Coriander powder
  • Amchur powder
  • Ginger -Garlic paste--1 tbsp
  • Salt to taste


Heat oil in a pan and add mustard seeds..when they start spluttering add jeera,coriander crushed,turmeric,chill powder depending on how hot you prefer now add ginger garlic paste.. a pinch of hing (asafoetida) .Add onions and fry for 1-2 minutes and add the tomatoes..fry for few minutes  add the eggplant and then add the microwaved potatoes.cover this mixture for few minutes and add salt and amchur powder.Garnish with fresh coriander and enjoy!

Note--Potatoes are partially boiled because they take longer time than eggplants .
